Late next year, Denver’s RiNo neighborhood welcomes its first hotel, the boutique Ramble Hotel. The three-story property features 50 guestrooms, a theater and bar, meeting space, retail space, courtyard, restaurant and Death & Co bar. The bar is the first Death & Co location outside New York, where the brand is known for its industry-leading innovations and the most original cocktails in one location. Death & Co plans to additionally operate the beverage room service program, café bar, reservation-only private bar and courtyard food and beverage program. Gravitas Development Group is developing the hotel, with the property reflecting the group’s permanent location in the RiNo neighborhood. “The neighborhood is fertile ground for artists and creative entrepreneurs, and we hope to create a space where travelers and locals can personally experience the art, authenticity and ambition that make RiNo so great,” said Ryan Diggins, partner, Gravitas Development Group. “The project is about believing in a vision, taking risks and challenging the conventional hospitality model. Remaining independently branded and managed provides us with the best chance to evolve at the speed of Denver. We place a very high value on flexibility and autonomy and feel it gives The Ramble Hotel the best opportunity to remain culturally relevant, not only for the opening, but for years to come.” The exterior of the property is eye-catching, combining masonry and metalwork. The 4,700-square-foot lobby boasts 20-foot ceilings and includes an array of seating and the two Death & Co bars. Public spaces are created to encourage interaction and engagement, with inspiration from 17th-century French salons.

Husband-and-wife team Phillip Frankland Lee and Margarita Kallas-Lee made their mark by reinventing the term “hidden gem” through their surprising and intentional collection of destination restaurants. While they launched the original Scratch Kitchen in 2013, an expired lease prompted them to relocate to an unassuming strip mall in suburban Encino in 2015 and rename it Scratch Bar & Kitchen.
