The St. Regis Maldives Vommuli Resort debuted the newest addition to its Guest Chef series, welcoming London-based Chef Ollie Dabbous this month.

Dabbous is the executive chef and co-founder of HIDE, a Michelin-starred restaurant in London’s Piccadilly. HIDE earned its star within six months of its opening. Prior to that, he ran Dabbous, known for stripped-back fine dining and industrial décor.
On April 16 and 18, Chef Dabbous hosts lunch and dinner at The St. Regis Maldives Vommuli Resort. The curated menu will feature iced watermelon gazpacho, pumpkin compote, local tuna tartare with lime leaf vinaigrette, grilled lobster in a saffron and lemon verbena labne, sand-baked Wagyu beef, and kaffir lime pie, with each experience starting at $295 per person.
