Four Seasons Hotel Seattle recently unveiled a new stand-alone menu designed for travelers living a plant-based lifestyle. The wellness-focused, wholesome and altogether appetizing menu includes 10 new dishes.
“We have always welcomed and accommodated all types of dietary and wellness requests at Goldfinch Tavern. This dedicated, plant-based menu highlights our commitment to providing options for our guests,” said Emmanuel Calderon, executive chef, Four Seasons Seattle and Goldfinch Tavern. “The menu will evolve as our guests do, and we are excited for the opportunity to add more dishes and change ingredients to highlight the best of the Pacific Northwest.”
The menu’s starters include a beet root carpaccio, hummus bruschetta and raw cauliflower ceviche. Entrees range from eggless pasta fresca and lentil meatballs to cedar-baked tempeh with organic quinoa. Dessert options include a chocolate soufflé and coconut mousse.
The menu also includes a range of seasonal, locally inspired, spirit-free cocktails, made with fresh, vibrant ingredients such as Washington apples, ginger beer and kombucha.
The plant-based menus are available at Goldfinch Tavern and also through the hotel’s in-room dining services. Through summer months, the menu is available at INFINITY pool + bar.
