If you’re traveling to Hawai’i this fall, you’ll be just in time to explore some of the newest resorts and dining experiences. While lava tourism is hot as ever as Kilauea volcano continues to erupt, cool your heels enjoying dinner at the new 6,000-square-foot Merriman’s Honolulu in Ward Village, helmed by Executive Chef Jon Matsubara. For travelers with a sweet tooth, Waialua Estate Chocolate on Oahu offers a factory tour and the chance to sample the goods created from cacao beans grown locally at the estate’s 20-acre cacao orchard.

For an experiential outing at Four Seasons Resort Hualalai on Hawai’i Island, guests hike through nearby salt flats and harvest their own salt — then taste it during a cooking class led by Executive Chef Thomas Bellec.

New resorts and recently refurbished properties ready to welcome guests include the Timbers Kauai at Hokuala, where amenities include a double-tiered, infinity-edge oceanfront pool; oceanfront residences; an award-winning golf course; a variety of cultural and adventure options; and the heavenly Hokuala Spa.

Relaunching after a $35 million renovation, The Queen Kapiolani Hotel added a fitness center and an 8,000-square-foot third-floor lanai and pool. Guest dining now includes craft cocktails and fresh local fare served up at the new culinary concept DECK space. Also fresh from an extensive makeover, the Montage Kapalua Bay Resort on Maui revealed a new décor that draws on the colors of Hawai’i and Maui, incorporated into 50 luxury, residential-styled accommodations.

Get a fresh island perspective from the sky with the new 30-minute Pali Makani tour from Blue Hawaiian Helicopters. The Oahu-based tour takes in Honolulu Harbor, the Aloha Tower, downtown Honolulu and the Iolani Palace. The palace holds an interesting place in U.S. culture, as it is the only royal residence in the country. New private daily air charter service between Honolulu and Lanai is now available via Four Seasons Resort Lanai, operated by Mokulele Airlines. Rather take to the water? On Maui, adventurous souls can join Redline Rafting for a snorkel tour of the backwall of the island of Molokini, then swim in a submerged volcanic crater in the company of green sea turtles.
