Montego Bay’s Round Hill Hotel & Villas gears up for its new culinary collaboration with Chef Alex Dilling of Hotel Cafe Royal in London. The limited series of immersive dining experiences will run Nov. 25–28, with Chef Dilling bringing his modern French dishes to the Jamaican coast.
Chef Dilling is known for his precision, artistry and commitment to using the finest seasonal ingredients. He broke records when Alex Dilling at Hotel Cafe Royal received two Michelin stars just six months after opening in 2023, the only new restaurant in the United Kingdom to earn the distinction that year.
Throughout the collaboration, guests can taste the best of the best from Chef Dilling.
The Welcome Toast (Wednesday, Nov. 25)
The weekend starts at Round Hill’s weekly Manager’s Cocktails, offering an intimate chance to meet Chef Dilling and learn about his culinary techniques and philosophies with cocktails and small bites.
The Art of the Craft (Thursday, Nov. 26)
Get a behind-the-scenes look at Chef Dilling’s techniques with a live-cooking demonstration. Chef Dilling shows off the skills and dishes that earned him international recognition, while also giving guests a rare look into the world of fine dining. This event has limited seating. The Grand Finale Dinner (Saturday, Nov. 28)

Husband-and-wife team Phillip Frankland Lee and Margarita Kallas-Lee made their mark by reinventing the term “hidden gem” through their surprising and intentional collection of destination restaurants. While they launched the original Scratch Kitchen in 2013, an expired lease prompted them to relocate to an unassuming strip mall in suburban Encino in 2015 and rename it Scratch Bar & Kitchen. Even at a time when the San Fernando Valley was not known for innovative 5-star dining, the Lees’ concepts gathered such a strong buzz that discerning diners cheerfully followed them “over the hill.”
