Sirenian Bay Resort & Villas Opens New Martini Bar

In the town of Placencia, a popular beachside paradise on the Caribbean coast of Belize, lies the luxury Sirenian Bay Resort & Villas and, for the first time ever, the resort opened its three60 Martini Bar.

The new bar is located on the rooftop of a two-story building on the lagoon side of the Placencia Peninsula, featuring 360-degree views of the Peninsula’s palm tree-studded beaches. The new bar offers an extensive cocktail menu along with fresh tapas. While relaxing on the rooftop, guests can watch the sunset over the Maya Mountains just beyond the lagoon, and with 1,250 square feet of thatch roof-covered space, plus 880 square feet of uncovered space, it’s the perfect spot for small weddings, rehearsal dinners, receptions, birthday and anniversary celebrations, or business dinners.

 

The bar’s cocktail menu includes everything from traditional gin or vodka martinis to martinis with a Caribbean twist, such as the Coconut Martini, featuring vanilla vodka and coconut rum; the Purple Basil Martini uses basil from the resort’s organic garden; and the Espresso Martini includes fresh Central American coffee.

The tapas menu includes local favorites like sweet potato croquettes with watermelon rind chutney; sautéed chaya and jalapeño cheese sauce; and mojo steak skewers with chimichurri sauce and jalapeño pineapple slaw. Martini Bar appetizers from the resort’s casual dining restaurant Inky’s are available 3–5 p.m.; the tapas menu is available 5–9 p.m. The three60 Martini Bar is open evenings only, Thursday–Saturday, 3 p.m. to close.

 

Sirenian Bay offers four family-style villas, three with private pools, and 12 beachfront bungalows. The resort features a full-service spa, fitness center, several pools, an 18-hole professionally designed mini golf course, and two pickleball courts, among other recreational activities.
