In a first for Parisian palace hotels, Shangri-La Hotel, Paris embraces the green trend with the launch of a new vegetable-focused menu this month. On the first Thursday of every month, the property is hosting “100 Percent Green Dinners” at its La Bauhinia restaurant.

Diners at these Parisian green meals will enjoy a special five-course vegetable-focused menu as well as the company of one of the hotel’s exceptional French market purveyors as a DJ spins celebratory music. A market gardener, wine grower or farmer will explain their approach and how the seasons affect their work to the restaurant’s patrons.

Since his arrival at the hotel in January of this year, Executive Chef Christophe Moret has been cultivating nature-driven cuisine, imagining a “Rooted in Nature” menu that puts vegetables at the forefront without sacrificing taste and pleasure.

For this special series, the chef will develop a different green menu each Thursday, featuring vibrant and complex flavors like tomato bloody Mary and spring rolls made from watermelon stuffed with soup herbs; kasha and green vegetables en cocotte with almond milk; turnips and red beetroots roasted in a wood-burning oven and tofu ravioli with borsch vinaigrette; and strawberries scented with sangria, and coconut and lime sorbet.

To complement this innovative menu, Head Sommelier Cédric Maupoint chose wines produced through biodynamic agriculture, specific teas, coffees and non-roasted cocoa beans, all-handpicked and distributed through fair-trade channels.

The cocktail menu also received a special addition for the occasion, featuring a shot of cucumber, kale, celery and ginger juice.

Upcoming dates are Thursday, July 9, and then the first Thursday of each month from September through December. A five-course menu is priced at about $76, excluding drinks.
