Set for a spring 2023 opening in St. Thomas, Frenchman’s Reef announced its executive chef and the culinary concepts of its two new resorts, Westin Beach Resort & Spa and Morningstar Buoy Haus Beach Resort, an Autograph Collection Hotel. Under the leadership of executive chef Greg Smith, the two resorts will offer nine signature restaurants and lounges.
Smith is a graduate of Art Institute of Los Angeles. His hotel culinary experiences include roles at Sea Island, Four Seasons Nevis and The Ritz-Carlton, San Juan.
“We are excited for Chef Greg Smith to showcase his extensive culinary knowledge on the island, where he looks forward to creating innovative culinary experiences highlighting locally sourced seafood and seasonal ingredients,” said Kurt Wiksten, managing director, Frenchman’s Reef.
The new culinary concepts range from casual beachfront spots to fine-dining restaurants. Sugarfin is an indoor-outdoor restaurant, serving sushi and Caribbean Asian-style cuisine. Luna Mar highlights Mediterranean flavors. Isla Blue offers innovative island-inspired dishes with a private dining room option. Sandbar is an oceanfront bar serving classic, tropical cocktails.
Salt Shack boasts an approachable menu of tacos, burgers and sandwiches. Shorebird is a family-friendly breakfast spot with food stations and a barista. Edge Bar offers panoramic views from a swim-up bar and private cabanas, alongside beverages and lunch options. Tide Pool Cabanas & Bar is a lounge area with poolside service and private cabanas serving cocktails and light bites. Palm Court offers hammocks and seating areas with Caribbean-style food and beverage huts for a casual experience. Frenchman’s Roast serves up coffee, juice, grab-and-go bites and other sundries.
