The farm-to-table culinary movement arrived at Miami International Airport this spring with the airport’s Icebox Café becoming the first airport restaurant certified by the State of Florida’s “Fresh from Florida” program as a provider of locally sourced food. The popular Miami Beach restaurant expanded to Miami International Airport in 2010 and recently opened its Mediterranean Kitchen location inside the airport’s new North Terminal Marketplace in March.
Located in Terminal D, Icebox Café offers a menu reflecting the location’s tastes, seasons and trends. Dishes are created with the freshest ingredients of the area, grown or sourced usually within 100 miles of the restaurant location.
“Now more than ever, travelers are expecting world-class airports to provide the freshest, healthiest food options possible, so to that end, we congratulate Icebox Cafe on becoming certified as Florida Fresh and Redland Raised,” said Emilio T. Gonzalez, Miami-Dade Aviation Director. “We look forward to more restaurants at MIA increasing their use of locally grown food, which obviously benefits our local economy as well.”
