You won’t need rose-colored glasses in Lithuania’s vibrant capital on June 1 — the city of Vilnius will have colorfulness well in hand as it once again hosts its Pink Soup Fest. Local chefs Will ladle out their very best version of šaltibarščiai, served up in groovy pink hues, while activities on offer will include live music; workshops; and the “soup de grace,” an opportunity to swoosh down Bastion Hill in a giant reproduction soup bowl.

Voted the world’s best cold soup by Taste Atlas, the chilled, savory dish’s ingredient list varies from cook to cook, but often contains beet roots, cucumbers, buttermilk, fresh dill and eggs. It’s often served with a hot potato dish on the side.
“Cold pink soup is the taste of childhood, home, and real summer,” said Rita Keršulytė-Ryčkova, Chef, family-owned Lokys restaurant in Old Town, where the soup is accompanied by smoked catfish mousse. “For me, the dish is an irreplaceable summertime treat for when you want something refreshing yet filling.”

The main setting is Tymas Market, located adjacent to the city’s bohemian district. Festival-goers can sample pink soups prepared by globally recognized restaurants including Džiaugsmas and Nineteen 18. At Senators’ Passage in the center of Old Town, attendees can wander the well-stocked aisles to gather the makings for their own pink soup. This 400-year-old mansion sells seasonal farm-grown produce, artisanal breads, cheese and wine. Important to note when packing for your trip to Vilnius: Dressing or accessorizing in pink is encouraged, and the best costume will take a prize in a themed contest.
