Here’s something to whet your appetite: The new beachside restaurant by Chef Nobu Matsuhisa recently opened at Hotel Cala di Volpe on Sardinia’s sparkling Costa Smeralda. Called Matsuhisa Beach and designed by celebrated architect Matteo Thun, the new eatery combines stunning views over the beach at Li Itriceddi with a menu drawing from the best of Chef Matsuhisa’s renowned talents.

The relationship between the chef and the hotel began in 2018 with a seasonal pop-up restaurant installation. The next year saw the opening of Matsuhisa at Cala di Volpe Restaurant. The latest project is a natural extension of the chef’s celebrated talents. Famous for his New Style Japanese Cuisine, Chef Matsuhisa — born in Japan — experienced a wide variety of world cuisines during his extensive travels around the world, including Peru, Alaska and Argentina.

The menu draws on the chef’s mastery of sushi-making and also includes a selection of Matsuhisa Bites such as padron peppers with miso; tacos with salmon, tuna or lobster; and black cod butter lettuce. The menu is divided into cold dishes, special hot dishes, salads, sushi and sashimi, sushi rolls and desserts, including a range of gelati.

The tranquil concept space includes UMI Bar, where choices include a full menu of wines and spirits, plus exclusive beach cocktails. Atmospheric choices include the Ginger Madness, created with a blend of Tequila Casamigos, fresh ginger, fresh lime juice, angostura and ginger beer; and Cala Beach, which combines white rum, maraschino, pineapple, strawberry and soda.
