In Norwegian cities, a traveler may encounter a pier-side fisketorget with outdoor and indoor vendors selling fresh salmon, cod and shellfish artfully heaped onto disposable plates, the traditional grab-and-go “fish cake” — definitely worth trying if it is grilled before your eyes — and several snazzy, fast-casual counters. Fisketorget–Vågen in Stavanger, however, is a completely different proposition. Under the direction of Chef Karl Erik Pallesen, less is definitely more, from the limited-selection chalkboard menus on the restaurant side to its compact but prolific fishmonger shop drawing choosy locals.
The whole experience is at once rustic, elegant and storybook charming. Its window-intensive structure and simple seating allow diners to thoroughly appreciate the surroundings of old Norwegian houses and large boats on each side of Stavanger’s harbor. A jewel-like bar beautifully presents its aquavit, wine and beer options. While local guides bill the restaurant’s genre as “traditional Norwegian seafood,” there’s nothing old-fashioned about what eventually makes it to the table.
Pallesen’s fish soup is understandably the perennial bestseller: a rich yet light broth that’s not overly salty, as some soups can run a bit sodium heavy, and filled with succulent pieces of fresh seafood and fish. A fish-of-the-day special allows the culinary team to get a bit modern with what’s in season, while old-world dishes such as a herring plate and regular offerings like a shrimp sandwich plate and mussels in green curry are presented with flair, as are the simplest fresh chilled seafood platters. Even with fine contemporary dining in Norway on the upswing, Pallesen’s commitment to the food itself makes this spot a true catch.
