I recently stayed at the lovely The Ritz-Carlton Resort in Key Biscayne, Florida, while meeting with clients in the Miami/Fort Lauderdale area. The resort hosted my colleague, Marie Edwards (director of sales) and me to dinner in its restaurant, Lightkeepers.
Upon arrival we were greeted by the courteous staff and escorted to our table, which, if restaurant seating was real estate, would have been considered a penthouse on Park Avenue in New York City! What a gorgeous view. We sat in awe at the swaying palm trees, impeccable landscaping and ocean-front view that was what most of us dream about as we stare at our office screensavers of beach-front images to inspire wanderlust during what might be a long day under florescent lighting.
The sommelier, Jorge Mendoza, was extremely attentive as he introduced himself and the wine pairings for the evening. His character and charm enhanced the evening overall and made Marie and me feel delighted to enjoy his educated presentation during each course. He also surprised us with a 20-year-old Port!
Executive chef Raul A. Del Pozo introduced himself and discussed the dishes he selected for us for the evening. His choices were exquisite, and each bite was constructed to consistently exceed expectations. Some features we tasted that were especially yummy were the octopus, served with a seaweed salad and a spicy aioli, and a beet salad with fresh cheese made locally. The fresh fish entrées we tried were so light yet flavorful.
My overall impression of Lightkeepers is it is an oasis for fine diners. The three key elements to any fabulous restaurant are there: guest service that is superb, cuisine that can make any guest’s taste buds dance, and an atmosphere fit to impress!
If you find yourself in the Miami area, make a stop for a lovely dinner you will never forget.
