November 2021–February 2022, Air France is partnering with Michelin-starred chefs Régis Marcon and Mathieu Viannay to create the airline’s La Première and business long-haul menus. Aimed at promoting French fine dining, the new menus will appear on departures from Paris (CDG). Dishes will range from vegetarian to poultry, meat and fish.
For the first time, in the business cabin, Air France employed Viannay to come up with eight dishes for passengers. This menu includes beef tenderloin, risotto verde, poultry fillet and poached cod fillet. Each dish seeks to combine delicate flavors with local produce.
Air France’s exclusive La Première cabin entrusted Marcon, accompanied by the service and skill of the Servair Culinary Studio, to concoct six dishes. This menu includes fine-dining dishes like braised veal shank, mixed scallops and scampi, confit pigeon and vegetable lasagna.
