The sea is ever present in the new Green Pearls member ADLER Spa Resort SICILIA, reopening this month after its first full season. Surrounded by olive groves and at the gates of the rugged Riserva Torre Salsa National Park, the property invites its guests to relax and indulge in an upscale well-being experience.

True natural luxury, in harmony with the surroundings, is the focus of the latest addition to the ADLER family of properties. The resort was developed in close cooperation with the local community, as well as the World Wildlife Fund and previous owners of the property. The result is a resort blending seamlessly into the landscape.
Located on the Southwest coast of Sicily, the 90-room resort lies within walking distance to the beach, and the nearby nature reserve is home to Caretta turtles, porcupines, birds of prey, tortoises, lizards and butterflies. Guided hikes and nature tours are easily available. Other activities include horseback riding; electric bike tours; and a fully equipped spa and wellness center with three pools, a thalasso rooftop whirlpool, three saunas and three panoramic relaxation areas.

The stunning architecture is enhanced by herb beds and olive groves, from chefs obtain some of the food for the kitchen. The farm-to-table concept is lived here right before the guests’ eyes, as the Mediterranean Sea is omnipresent. Honoring the coastal location, the resort offers swordfish wrapped in colonnata lard in sparacelli cream, flavored with lemon and mint. This is accompanied by bottarga powder, a red Tropea onion cooked by osmosis with nero d’avola, (balsamic vinegar, sugar and aromatic herbs), among many other creative and tasty menu options.
