Hotel Saint Augustine, expected to softly open in Houston this December, is a design-savvy boutique hotel from Austin-based hospitality group Bunkhouse. The hotel will officially debut January 2025.

The new property will further enhance the Bunkhouse reputation for creating hotels with a strong emphasis on design. Located in the heart of Houston’s Montrose Museum District, the property will have 71 rooms and suites spread across five small buildings over two floors, and includes Perseid, an all-day restaurant; an intimate lobby bar; event space; and a cloistered, circular courtyard pool.

The property’s interior spaces are designed by Post Company, an award-winning New York- and Wyoming-based design studio. In collaboration with Bunkhouse, Post Company created an inviting and whimsical destination hotel across from the Menil Collection campus near Menil Drawing Institute. Although Hotel Saint Augustine is not directly affiliated with the well-known Menil Collection, the hotel seeks to align itself with the spirit and character of the Menil family and Menil Museum’s collection, as well as of Houston itself.

In keeping with Bunkhouse’s Texas roots, Hotel Saint Augustine’s architecture is designed by the renowned Texas firm Lake Flato Architects, with landscape architecture byTexas studio Ten Eyck. The property is connected by open-air bridges and porches that blend seamlessly into the neighborhood’s residential character, with four landscaped courtyards and winding outdoor pathways that will surround guests in a private garden.

The hotel’s food and beverage concepts, including Perseid, a lobby bar and event spaces, will be operated by noted Houston chef and restaurateur Aaron Bludorn, who successfully opened three restaurants in Houston, including Bludorn, a semifinalist in the James Beard Awards for 2024; Navy Blue; and, most recently, Bar Bludorn.

Under the direction of Chef Bludorn and Director of Operations Cherif Mbodji, Perseid offers its own definition of a quintessential neighborhood bistro, with a menu influenced by Houston’s cuisine and culture through dishes combining refined comfort and classic technique, with a focus on bold flavor.

“The restaurant is going to be a Gulf Coast bistro,” Bludorn said. “It’s going to be a fun meeting point for Houstonians to come and enjoy French-inspired food with a Gulf Coast bent.”

In celebration of the hotel’s opening and to honor its first guests, Hotel Saint Augustine has a special opening offer. When making reservations, use code NEWINTOWN to enjoy 20 percent off the best available room rate; an American breakfast for two at $20 per person per day, maximum of two guests per occupancy; a complimentary upgrade to a suite; and a late check-out of 2 p.m., based on availability. This opening offer is valid until Dec. 31 or later, depending on opening date.
