A new afternoon tea experience at Four Seasons Resort Chiang Mai celebrates spring and the flavors that come along with it. The seasonal afternoon tea menu highlights fresh figs harvested from a local farm, less than an hour’s drive from the property. It also incorporates local ingredients such as honey and fermented sweet rice.

The menu combines classic tea favorites, as well as fig-inspired, innovative dishes. Expect sweet and salty fig toasts, fig honey crumble, pork fennel and fig sausage rolls, fig scones and fig jam. Items are presented to diners as they overlook the rice paddies, with items delivered in a traditional Thai tu tab khao, a historic food cupboard used extensively in Thailand before the advent of refrigeration.

“Figs are considered superfoods by some because their overall nutritional value is quite commendable — they are believed to have the highest mineral and fibre content of all common fruits, nuts and vegetables,” said Yanisa Wiagnon, pastry chef, Four Seasons Resort Chiang Mai. “We wanted to present a menu that not only reflects seasonal produce that is farmed sustainably, but also one that complements a healthy lifestyle.”

The seasonal afternoon tea experience is available every day, 1–5 p.m. At the end of the tea experience, visitors can take in the daily farmers’ parade, which signals the end of the day’s work in the rice paddies.
