There’s something new on the table at Rome‘s iconic Hotel Hassler Roma. The hotel is offering a vegetarian tasting menu at its panoramic, Michelin-starred restaurant Imàgo. The new menu, created by Chef Francesco Apreda, is available through the end of summer.
Apreda found inspiration for his innovative menu is inspired in his native Naples and his adopted city of Rome as well as his time spent in India and Japan. Vegetarian offerings feature a wide variety of fresh, seasonal, local produce combined with Asian flavors such as soy-flavored eggplant, lime dust, lemongrass-infused white asparagus, kumquat compote and shiitake mushrooms.
“My wife is vegetarian, and I have spent extensive time in India … where I learned a great deal about how enjoyable vegetarian cuisine can be,” said Apreda. “It’s all in the ingredients and the preparation, and I am confident Imàgo’s new menu will be a great success.”
Apreda’s innovative vegetarian dishes including intriguing combinations such as broad beans and lime dust, breaded zucchini and goat cheese cutlet, and beer-flavored spring onions with kumquat compote.The vegetarian tasting menu is priced at 120 euros per person.
