All Nippon Airways Collaborates with Michelin-Starred Chef

Passengers on All Nippon Airways business-class flights are in for a treat this spring.

Patina Restaurant Group Master Chef Joachim Splichal will collaborate with the airline from March through May.

Business-class passengers on flights departing from Japan to the United States and Europe will experience a curated in-flight menu inspired by Patina Restaurant, Splichal’s flagship, Michelin-starred restaurant located at the Walt Disney Concert Hall in Los Angeles.

“When it comes to my food, I have the highest standards — everything must be perfect. And at 30,000 feet in the air, that is not easy to do,” said Splichal. “But I fly with ANA quite often and am constantly amazed by their high level of service and commitment to outstanding guest experiences. They are an exemplary partner for Patina.”

The collaboration is part of All Nippon’s The Connoisseurs programme, launched in 2013 to empower chefs and other professionals to produce outstanding cuisine exclusively for ANA lounges and international flights departing Japan. More than 20 chefs contributed specialized menus, all well received by passengers.

Dishes served on ANA flights this spring will include soft smoked scallops with carrot mousse; roasted beef with ponzu jelly and green tea tofu; miso-braised short rib; sweet pea agnolotti with sautéed Girolles mushrooms; and baked salmon and Safran orzo pasta with pistachio basil sauce.
