Known for its blend of Mexican and Tex-Mex cuisine, San Antonio is the perfect location for the chef’s yearlong mission to study food traditions and create a historically accurate menu that includes plenty of modern twists.

If your travels take you to San Antonio, you can taste for yourself in a beautiful setting — Cured is located in a carefully renovated historic building, built in 1904. Menu samples include Red Wattle Pork Chop served with capirotada, a Mexican bread pudding prepared with clove, dates, raisons and Mexican cinnamon; Bison Tartar topped with a cured farm egg yolk and served with brioche and huitlacoche, sometimes called the Mexican truffle; and Mesquite Cake accompanied by kumquats, horchata anglaise, fig, raspberry, blueberry and honeycomb.
