Born in the American West to feed hungry cowhands on long cattle drives, chili has been a chuck wagon staple since the 1880s. By the 1940s, the popular dish could be found in towns from Austin to Boston. Famous Americans who favored their local versions include screen star Elizabeth Taylor who had Chasen’s fabled chili shipped from Hollywood to Rome while she was filming on the set of Cleopatra and President Lyndon Johnson’s first lady, Lady Bird Johnson, whose recipe for Pedernales River Chili left out the beans in true Texas tradition.
