Airlines Follow a Multistep Process to Ensure Delicious Dining in the Sky

When you’re floating above the clouds and a meal arrives in front of you, it’s easy to disregard the various procedures and logistics it took for it to seemingly appear out of thin air. In-flight catering is a bit like restaurant service in this way, following a careful chain of sourcing, planning and development … just on a more global scale.

In reality, in-flight catering requires a collaborative effort from airline operators, culinary teams, caterers, suppliers, operational specialists, airport staff and cabin crew. Much of the effort begins on the ground in test kitchens where menu planning and recipe development remain essential to creating a meal specifically suited to altitude and cabin pressure. And despite maligned misconceptions across the industry that in-flight meals are prepared with highly processed ingredients, airlines offer more transparency than ever when it comes to their production process, which includes recipes prioritizing premium ingredients and without artificial additives or preservatives.

“Behind every meal served on board is an enormous amount of craftsmanship and coordination, from menu development and daily production to quality control, logistics and onboard presentation,” explained a spokesperson for Turkish Airlines. Here’s a behind-the-scenes look at the logistics of in-flight catering.

MENU PLANNING
As with any culinary experience, in-flight catering begins with conceptualizing a menu. Depending on the carrier, this can include
sourcing seasonal ingredients native to a flight route’s origin or destination city, working with acclaimed chefs in a certain region, or tapping into current dining trends.

At Delta Air Lines, menu planning always begins with “focusing on the basics: quality ingredients prepared well,” explained Stephanie Laster, managing director of Onboard Experience. Only then does Delta seek outside culinary talent and collaborations that can elevate these flavors. (Notable recent chef partners include José Andrés and Mashama Bailey.) At Cathay Pacific, this planning stage also includes identifying customer needs and menu structure to ensure each part of the meal feels complementary and thoughtful.

RECIPE DEVELOPMENT
A major part of recipe development comes with the fact that most meals are cooked on the ground, then finished or reheated on board. In this case, every component must be carefully designed to maintain its texture, appearance and flavor throughout the entire process, from kitchen to tray in the sky. Turkish Airlines develops and extensively tests all of its recipes to consider the effects of altitude, cabin pressure and flight duration. “As taste perception changes in the air, our chefs carefully adjust seasoning, texture and presentation to ensure a perfectly balanced flavor profile,” shared Turkish Airlines.

Many travelers mistakenly think in-flight meals are simply restaurant dishes served on an aircraft, but this isn’t the case. Actually, every meal served on board must be developed for the in-flight environment (a dry cabin at 35,000 feet of altitude). What works perfectly at ground level may not hold up on board, explained the Cathay Pacific team; therefore, every dish must be designed not only for flavor and presentation but also for consistency, food safety, large-scale production, transportation, storage and onboard preparation. Cathay also works with its catering partners, chefs and specific-occasion restaurant partners, including Hong Kong-based, Michelin-starred restaurants Duddell’s, Louise and Yat Tung Heen, to develop dishes specifically for the flight environment.

PRODUCTION BEGINS
Once the recipes are approved, Cathay said, sourcing requirements and production specifications must be confirmed between its design teams and caterers. Ingredients are then procured and production planning begins. “Consideration is given to moisture management, ingredient compatibility, presentation, and how dishes perform throughout the catering and service journey.”

Airlines that outsource catering partners have already vetted these suppliers thoroughly for quality control and cold-chain management to maintain proper temperature throughout preparation, handling and transport. Delta’s catering partners, for example, follow established regulatory food safety and catering‐handling standards and also apply Delta‐specific operating controls designed to support quality, freshness and service readiness. The meals are all cooked, rapidly chilled (to preserve freshness and prevent bacteria growth), assembled and packaged in these catering kitchens.

DELIVERY DAY
Once the meals are cooked and packed into industry coolers, they are loaded onto catering vehicles and transported to the aircraft. Some commercial airlines use catering kitchens within the immediate vicinity of the airport, while others use culinary partners who might be farther afield; either way, the packaged meals are usually delivered via a refrigerated vehicle to airport cold rooms where they are stored until the flight they’re assigned to has arrived.

“Each flight receives a carefully planned catering load based on passenger numbers, cabin mix and service requirements,” according to Cathay. Timing the delivery is an entire process of its own, given flight delays and gate changes; however, most commercial catering arrives at the airport around three hours before departure. Private operators typically average about an hour before flight time. “Delivery timing is always closely aligned to the operation to support freshness,” said Delta’s Laster.

ONBOARD STORAGE, PREPARATION AND SERVICE
While all airlines have practices for safe and optimized onboard storage conditions (allocated space and temperature), carriers follow different policies when it comes to training cabin crew for in-flight service. On Turkish Airlines, flight attendants receive dedicated service training, including detailed instruction on meal handling and service procedures. They are also trained on the correct heating temperatures and heating times for each menu item to ensure every dish is served under optimal conditions while maintaining its intended quality, flavor and presentation.

For business-class passengers, Turkish Airlines includes a Flying Chef as part of the airline crew who is responsible for the perfect product presentation as well as culinary assistance for flight attendants. Cathay Pacific’s cabin crew also receive training to help them deliver the premium in-flight dining experience with confidence and consistency. This includes understanding any special ingredients used, menu concepts, food handling requirements, service delivery, product knowledge and presentation standards.

FEEDBACK AND REINVENTION
Consistency is a priority not just in presentation and taste but also feedback. For this reason airlines constantly monitor customer and crew input to refine their menus and dining experience. “As menus evolve, additional briefings and product information are provided to ensure our teams remain informed about new dishes, partnerships and service enhancements,” the Cathay team explained. As a customer, therefore, if you have strong opinions about an in-flight meal on your next journey — whether positive or negative — it’s important to share this feedback to help define future onboard dining experiences.
