5 Hotels Transform the Industry with Regenerative Urban Farming, Vertical Gardening

Urban farming creates new meaning for farm-to-table and is more important than ever. As the world turns toward more sustainable practices, the move to on-site vertical and regenerative urban gardens permeate cities across the globe. Whether it’s to create more affordable produce, encourage easy access to fresh organic produce or create more carbon sinks, city properties are concocting their own idyllic green habitats, as well as initiate access to experts and educational resources on urban garden spaces.

Here are some travel destinations taking on the trend of urban farming:

WorldMark Portland Waterfront Park

In the heart of Portland, running on 80 percent renewable energy, WorldMark Portland Waterfront Park introduced an on-site demo garden producing food for a local CSA to feed families fresh produce. The park enlisted regenerative urban farmer Dan Campbell to spearhead the project. The garden serves as a catalyst for education as Dan hosts monthly complimentary workshops to instruct guests on soil health, native beekeeping, biochar, carbon capture, pickling, pruning and more.

Accor Hotels

Accor Hotels has taken one of the biggest strides to date by installing more than 1,200 urban fruit and vegetable gardens as part of its commitment to cut emissions from food transportation and help reduce food waste output.

Four Seasons Hotel Melbourne

Melbourne’s new Four Seasons Hotel plans to feature the world’s tallest vertical garden, stretching nearly 4 miles into the sky. The biophilic design integrates natural elements in architecture to create a vertical mini-metropolis.

Fairmont Waterfront

At Fairmont Waterfront in Vancouver, guests are encouraged to eat locally with the introduction of the first 2,100-foot green roof on its third-story terrace. Here, 20 varieties of fruits, vegetables, herbs and edible flowers grow. Designated as a Certified Wildlife Friendly Habitat by Canadian Wildlife Federation, the garden is home to a staggering 250,000 honeybees who produce more than 200 pounds of honey annually.

The Peninsula Hotel, Bangkok

The Peninsula Hotel, Bangkok grows Thailand’s native produce, herbs and spices, like kaffir, tumeric and lime, and implement them across the hotel’s cocktails, cooking and spa treatments. The hotel’s green space also creates a relaxing atmosphere in bustling Bangkok.
