Meliá Chiang Mai, Chiang Mai’s newest 5-star hotel, introduces its new fine-dining restaurant serving modern Northern Thai dishes with Mediterranean flair. Located on the hotel’s 21st floor, the new restaurant boasts panoramic views of the city and Doi Suthep Temple to the west.
With just 38 seats, the restaurant welcomes guests with an arched entrance, paying homage to a nearby temple. Large, lit installations of umbrella ribs adorn the ceiling, serving as a salute to Chiang Mai’s Bo Sang Umbrella Village. The restaurant’s various canopies of umbrellas hang from the walls, with some made from antique Chiang Mai textiles.
Dishes celebrate traditional Lanna cuisine with Mediterranean influences. The restaurant’s 360º Cuisine program promotes healthy and sustainable eating based on farm-to-plate and plate-to-farm processes. Award-winning executive chef Suksant Chitunthratip and sous chef Karn Phojun prepare each dish from the seasonal menu à la minute from an open kitchen.
The restaurant recommends Mai’s Samplers, tasting-sized portions of five different delicacies including crisp, fried fluffy catfish and pomelo salad scented with rice field crab jus; Vietnamese sausage and edible flowers salad roll with yellow chili puree; grilled green chili relish on crispy salmon skin; Northern Thai-style pork sausage with grilled ginger and pickled cucumber; and warm, spicy tomato relish in golden-fried tortilla.
