In its ever-expanding commitment to sustainable cuisine, the 500-acre Grande Lakes Orlando resort recently debuted Whisper Creek Farm: The Kitchen and The Brewery, offering new farm-to-table food and beverage options.

Showcasing a rustic design with a variety of communal, high-top, sofa, outdoor and bar seating, The Kitchen features sustainable cuisine as well as brews from The Brewery, an in-hour first-of-its-kind nano-brewery producing house-made brews on tap and served throughout the resort.

Menu items include snacks, small plates and sandwiches, charcuterie and cheese boards, and flatbreads featuring seasonal ingredients from the 7,000-square-foot on-site garden at Whisper Creek Farm as well as fresh eggs daily from the farm’s recently added chicken coop.

Signature menu items include fresh pickled vegetables, hop-salted house pretzels served with ale cheese fondue, seasonal flatbreads and a smoked ham sandwich with a Whisper Creek Farm fried egg served on house-made Whisper Creek Farm honey pecan roll (inspired in part by a popular ham sandwich on the original 1927 Marriott Hot Shoppe menu).

The Kitchen’s six taps rotate five seasonal selections from The Brewery as well as the always-available Surplus honey citrus ale, Grande Lakes’ flagship beer naturally infused with honey sourced from the resort’s on-property apiaries.

Set just off the main JW Marriott lobby, The Kitchen features accommodations for 100 guests indoors and 50 on the outdoor terrace and is open from 5–11 p.m., with the bar open until midnight. The space is also available as a social meeting space bookable for group functions during the day.

Since the creation of Primo Garden, providing fresh produce and herbs for award-winning Chef Melissa Kelly’s Primo restaurant at JW Marriott Orlando, Grande Lakes has been dedicated to offering sustainable cuisine, launching several apiaries, baking all its bread in house and welcoming 30 chickens to a Whisper Creek Farm coop. The Ritz-Carlton, Orlando recently opened Highball & Harvest, offering Southern-inspired cuisine featuring ingredients from Whisper Creek Farm, in September 2014.

Situated at the headwaters of the Florida Everglades, Grande Lakes Orlando consists of the luxury 582-room Ritz-Carlton and deluxe 1,000-room JW Marriott as well as an 18-hole championship golf course designed by Greg Norman and the 40,000-square-foot Ritz-Carlton Spa offering total wellness treatments and a rooftop eco-space.
