Morimoto By Sea
Exclusive to Holland America, Morimoto By Sea brings the best of Chef Masaharu Morimoto to the open waters. Located next to Tamarind, another signature restaurant, Morimoto By Sea celebrates the cruise line’s fresh fish program. You won’t want to skip the Morimoto fresh tuna pizza, a unique take on the dish with anchovy aioli, Kalamata olives, red onion and jalapeño. For something comforting, indulge in the Tori ramen noodles soup, where hot, creamy broth is poured tableside atop soy egg, bamboo shoots and ramen. All main courses are show-stoppers, especially the crispy fried whole market fish and Ishiyaki Buri Bop, where fresh, Pacific yellowtail is cooked tableside in a hot stone bowl. If you have room for dessert, watch milk hot chocolate sauce pour over a dark chocolate sphere, revealing a decadent ganache and marshmallow within.
Tamarind
Just across the hall from Morimoto By Sea sits Tamarind, where Far East flavors and cooking techniques delight. Perfect for diners unsure of what to eat, the Satay sampler brings together Malaysian lamb, Chinese beef, Thai chicken, Indonesian pork and Vietnamese shrimp with an array of sauces. Indulge in the creamy Panang red curry coconut chicken dish, a filling choice brought together with wok-seared vegetables, roasted peanuts and crispy lotus. The dish also lets you select your spice level. End the night on a refreshing note with a selection of house-made sorbets inspired by Asian flavors like lemon basil, yuzu and lychee, each as tasty as the last.
Pinnacle Grill
If you’re craving an exceptional steak, Pinnacle Grill has you covered. Boasting a selection of 28-day, wet-aged USDA Prime steaks, Pinnacle Grill makes it hard to choose which cut to enjoy. Prepare for your entrée with a bowl of lobster bisque, a flavorful and savory appetizer where soup is poured tableside and topped with crème fraiche. Whatever cut of steak you choose (although the filet mignon is always a crowd-pleaser), pair it with a selection of sauces like shallot and red wine bordelaise, green peppercorn, bearnaise, or mustard and cognac sauce. Of course, the shallot and red wine bordelaise is a frontrunner. And don’t forget to add a baked potato or side of lobster mac and cheese to your meal.
Canaletto
Come evening, part of Lido Market, an all-day dining venue on board, transforms into the Italian Canaletto. While the boat may not sail to Italy, diners can taste Italian classics. One can’t go wrong with the burrata to start, where pistachio-garlic gremolata and extra virgin olive oil complement fresh plum tomatoes. All pastas are made fresh daily, and the Italian sausage paccheri will wow with tomato, ground sausage, black olives and pecorino Romano cheese. And be sure to round out the dining experience at Canaletto with a dish of the rich chocolate hazelnut tart topped with Nutella and chocolate sauce.

After a long drive from our previous destination, it was a relief to see Althoff Grandhotel Schloss Bensberg in our view. When we pulled into the hotel court, I felt like we were pulling up to a royal palace. Considering the hotel was originally built as a castle for Prince Elector Johann Wilhelm II of Duesseldorf and his wife, Maria-Luisa of the Medici family, my thought wasn’t that far off.
