In the heart of London’s prestigious Mayfair neighborhood and within COMO Metropolitan London is Labombe by Trivet, a relatively new restaurant and bar already making waves across London’s dining scene. I experienced firsthand why Labombe by Trivet has made a name for itself in the short time it’s been open.

Located just off the lobby of the hotel, this softly lit space embraces intimate dining through neutral colors incorporated throughout, from the seating to the warm wood tables.

My server informed me of his top selections for appetizers, so we opted for the Infinity sourdough and Espelette butter, as well as the Bottarga toast. I learned that the sourdough is called “Infinity” because nothing utilized in the process of its creation goes to waste, and all residual ingredients are saved to craft more sourdough in the future. Soft, warm and with that satisfying crunch, the bread set the stage for the Bottarga toast. The restaurant’s take on the Mediterranean dish involved mulled roe between two pieces of fried toast. As my sister, who joined me at the restaurant described it, it was like “an elevated grilled cheese, where, instead of cheese, it’s mulled roe, and is absolutely delicious.” I agreed wholeheartedly.

For cocktails, I enjoyed the menu separating cocktails by decades. For instance, the negroni was categorized under the 1910s, while Mr. Bil’s Martini was placed under the 1950s. I took a trip back to the 1990s with the Appletini, concocted with Beluga Noble, granny smith cordial and sake. Tangy, a little sour and crisp, this tasty tipple perfectly complemented my meal for the evening. My sister stayed in the present, ordering the Labombe Spritz (categorized under the 2020s), for she always leans toward spritz drinks. This spritz was the restaurant’s version, complete with Forgotten Aperitivo, chartreuse Gentian and sparkling wine.

Selecting our main courses was perhaps the most difficult decision. I found myself torn between red mullet and sirloin and pink bream. In the end, I landed on the Denver steak, while my sister chose the sirloin. It seemed we both were in a red meat mood, and we’re so glad we were. We shared the dishes, and added a side of bitter leaf salad and skin-on fries with a charred tomato relish to complement the entrées. Both entrées were tender, cooked exactly to our preferences and perfectly seasoned. I never like when good cuts of meat are over-seasoned, for it masks the beauty of the meat, so I was delighted with our dishes. Labombe by Trivet understands that, to respect the dish, one must use seasoning sparingly to let the meat speak for itself. The salad was refreshing, the dressing light and flavorful.

As we sat back in our seats, full and more than relaxed after a wonderful meal, we looked out the window to the street and Hyde Park in the distance. It was the perfect end to a perfect day in a perfect city.
