The Waldorf Astoria Ras al Khaimah in Ras Al Khaimah, the United Arab Emirates’ northernmost emirate, is the setting for a master class led by Chef Yukitaka Kitade on Oct. 19. Kitade, who heads-up the hotel’s UMI restaurant, will lead class participants in the preparation of Japanese cuisine with a special emphasis on presentation and beauty, along with the preparation of teppanyaki, prepared with a special iron griddle.

New at UMI, a traditional multi-course Kaiseki menu honors Japanese dining traditions with an artistic approach to food preparation and presentation that harmoniously incorporates taste, texture, appearance and varying colors. Dishes composed of fresh, seasonal ingredients garnished with aromatic leaves and colorful flowers are showcased in the hotel restaurant’s dramatic dining room where décor features gleaming onyx-colored pillars, walls adorned in chainmail, a semi-private dining space wrapped around a floor-to-ceiling chandelier, and a private dining room adorned with flashy pink seating and bamboo lighting.
