As part of its commitment to promoting French haute cuisine, Air France is serving business-class passengers new dishes from renowned French chef Francois Adamski for the next six months.
Adamski joins a list of starred French chefs Air France has worked with since 2011 to offer premium passengers a taste of fine French fare, including Joel Robuchon, Gay Martin, Michel Roth, Thibaut Ruggeri, Regis Marcon and Anne-Sophie Pic.
New gourmet creations from Adamski include lightly grilled smoked salmon with a vegetable medley and creamy lemon sauce; tender roast chicken fillet with carrots and celery in a cumin sauce; chicken tajine and vegetable semolina with lemon confit and Thai coriander; roast duckling fillet with sweet potato puree and tangy lime sauce; cod fish fillet and hazelnut crumble with celery and chestnuts; and slow-cooked knuckle of veal and truffle paste with potato puree.
The six dishes are available alternately on long- and medium-haul flights from Paris Charles de Gaulle every two weeks for the next six months.
Originally from the north of France, Adamski is lauded as one of the most outstanding disciples of French classic cuisine with a reputation earned through a discreet and unrelenting application to his art. With two Michelin stars awarded in Bourges and Bordeaux, he now runs his own establishment in the South West of France, the new hub of modern fine cuisine, where he signs menus for prestigious restaurants.
