Renowned Chef Charlie Palmer debuted three new distinctive dining venues in the legendary Knickerbocker Hotel in New York, situated on the southeast corner of 42nd Street, overlooking Times Square between Broadway and Bryant Park. New options include Charlie Palmer at The Knick, The Knickerbocker’s signature full-service restaurant and bar; JAKE’s @ The Knick, the hotel’s ground-level espresso bar; and St. Cloud, the hotel’s unrivaled 7,500-square-foot rooftop bar and terrace, set to open spring 2015.
“Developing the three restaurants, and the many integrated food and beverage components at The Knickerbocker, has been a true passion project for me for the last several years,” said Chef Charlie Palmer. “The landmark hotel, Times Square location and historic significance have been inspiring for me as our team has worked for the past 16 months to create unique eating and drinking experiences throughout the property. Each outlet — Charlie Palmer at The Knick, JAKE’s @ The Knick, St. Cloud, and of course, Aureole – have been strategically designed to cater to the myriad of guests that will enter through the Hotel’s front doors.”
Located on the fourth floor of The Knickerbocker, the hotel’s signature restaurant, Charlie Palmer at The Knick, offers a glamorous ambiance and menus with a vast array of options inspired by Palmer’s renowned progressive American cooking style. Additionally, the fourth floor features The Salon, the hotel’s private event space capable of accommodating up to 250 guests.
An ideal location for high-powered breakfast meetings, Charlie Palmer at The Knick offers customized breakfast caddies with a selection of fresh juices, freshly baked breads and pastries, coffee and tea and more. Lunch includes locally sourced, seasonal items, while dinner offers a more intimate setting with signature menu items such as Scotch quail eggs with pop corn shoots, dijon and pancetta Aioli; grilled romaine hearts with garlic breadcrumbs, shaved pecorino and honey-lemon emulsion; and The Knick Burger, a dry-aged custom-blend patty topped with short ribs and Irish Cheddar served on a brioche bun made by Aureole baker, Peter Edris. The lunch and dinner menus also feature The Knick Test Kitchen, a daily special menu featuring two to three varieties of meat offerings, including dishes such as veal head cheese and flash-seared sweetbreads.
Operating as the second portal entry to the hotel, JAKE’s @ The Knick welcomes guests through a barrel-vaulted ceiling, creating a sanctuary for both New York City locals and visitors alike. The venue offers an all-day menu, including coffee and espresso provided by Brooklyn Roasting Company and artisanal flatbreads from Sullivan Street Bakery.
Opening this spring, the highly anticipated rooftop bar, St. Cloud will feature a seasonal menu with small plates expertly paired with a progressive cocktail program. The 7,500-square-foot space will feature a signature cigar lounge from celebrated tobacconist Nat Sherman and the Waterford Crystal Lounge, a luxurious space featuring custom furniture from acclaimed British designer Jo Sampson, as well as glamorous Waterford bar and stemware.

May 27, 2025Plan a Legendary Gathering in Honolulu
Myths and origin stories form a powerful framework for the history of Hawai‘i. Marking the horizon behind Honolulu, the ancient volcanic formation of Lē‘ahi — technically a volcanic tuff cone more commonly known to the world as Diamond Head — provides a constant physical reminder of the tales that shaped the history of this location. While researching legends for my Hawai‘i-based Dark Paradise Mysteries series (Kensington Books), I learned the tale of the demigod Maui, who used his enchanted fishing hook to reach into the sea to heave the Hawaiian islands, including Diamond Head, above the surface of the water.
