Located on newly expanded Plaza del Carmen in Madrid, Thompson Madrid, by Hyatt stepped up its culinary offerings with the launch of three new restaurants.

“Dining in Madrid is much more than a meal; it’s the city’s grand pastime,” said Amar Lalvani, president and creative director, The Lifestyle Group, Hyatt. “The food must be delicious, of course, but so must the space, the people, and the rhythm. At Thompson Madrid, each venue reflects a level of taste and cohesive point of view that embodies Thompson.”

Guests can enjoy city views while dining at MAKÁÁ Rooftop Restaurant, where the open kitchen and fire-forward Mediterranean concept by Grupo Lamucca focuses on grilled fare. The space’s lush rooftop foliage was designed by Laura Berrocal Contreras, who created a green haven to backdrop a menu guided by fresh ingredients drawn from the garden, sea and farm.

At La Barra de Ultramarines on the ground floor, classic tapas reign in a relaxed setting with direct street access and an outdoor terrace. At the bar, traditional Spanish and Madrilenian gastronomy is showcased, with a focus on local flavors in dishes that include croquetas de cecina and alcachofas con jamón, steak tartare con tuétano a la brasa, and arroz de pato y foie.

Designed to evoke a traditional British speakeasy and inspired by the classic gentleman’s clubs of Edinburgh’s George Street, Jack’s Club is located within the property’s former Church of San Luis Obispo. Architectural elements of this historic structure have been preserved, while modern touches include a classic piano bar and an array of cocktails rooted in storytelling.

Pre- or post-dining, guests can enjoy the hotel’s rooftop infinity pool with hydromassage features, work out on state-of-the-art equipment in the 24-hour boutique fitness center, embark upon a guided city tour, take in an art exhibition or simply relax in the open-air courtyard.
