Offered next to the property’s infinity pool, this new service pulls from Mexican cuisine’s traditional use of fresh, local fruits such as mango, watermelon, jicama, pineapple and coconut for a cool and refreshing snack choice, while also channeling the colorful fruit carts that trundle the busy plazas in Mexico City.

Health benefits of these fruits are enhanced with a selection of curated artisanal salts and spices to also help boost fruit’s natural flavors. Choices include Maldon salt that’s been harvested since Roman times in the English coastal town of Maldon; Himalayan pink salt with cardiovascular health-boosting benefits; antioxidant-rich truffle salt; potassium-rich black volcanic salt; and traditional Maguey worm salt, or sal de gusano, a staple in Mexican cuisine used in the production of mezcal. To create it, sea salt is blended with ground, toasted agave worms and chili peppers, resulting in a unique smoky flavor.

Perhaps even more highly prized is the Colima sea salt available to poolside guests. Harvested by hand from the Lagoon of Coyutlán in Colima, Mexico, by Mexican salt farmers known as salineros, this salt is highly prized for its profile of essential minerals including magnesium, potassium and calcium — and for its lack of microplastics. For more than 500 years, Colima salt is gathered for just a few days each year, adding to its cachet.
