New Seirēn Cocktail Bar Delivers Iberian Coastal Cuisine to NYC’s Chelsea

Looking for a classy new spot in the Big City to entertain clients or meet up with friends? Newly opened in New York’s Chelsea neighborhood, Seirēn channels the conservas — premium jarred and tinned seafood treats and dainties — beloved in the coastal seaside tavern traditions of Spain and Portugal. Dreamt up by Nicholas Semkiw and Elvis Rosario of SRV Hospitality, together with partner Kevin Maribao, Seirēn features menus crafted by Executive Chef Max Centauro.

Centauro makes the most of delicious conservas recipe foundations, served with toasted sourdough, seaweed butter and pickled vegetables in dishes that include fire-grilled, wood-smoked Gueyu Mar chargrilled albacore pate; Lulina cockles in brine; and La Curiosa small sardines in chili olive oil with classic olive oil, lemon and truffle oil.

“In Spain and Portugal, conservas bars are about more than just tinned seafood — they embody a way of life centered on connection, craft and slowing down,” said Semkiw. “That philosophy really spoke to us. Seirēn is our love letter to that coastal simplicity, but envisioned through a New York City lens.”

Diners can also order from the oyster bar, where five–six varieties rotate daily; or enjoy the Three-Tier Caviar Selection of Siberian sturgeon, Kaluga hybrid and oscietra. There’s also a tapas bar with selections like stuffed Piquillo peppers with crab, mini lobster brioche, pan con tomate and Jamon Iberico de Bellota.

In the bar, experience haute mixology with cocktails crafted with rare botanical and coastal aromatics. Pair your meal with a Drunken Sailor Seirēn Song; or a Shore Critter created with creamy Caipirinha, Cachaca, lime, lime zest, coconut milk, condensed milk and sugar. There’s also a menu of hand-selected vermouths from Spain, Italy and France perfect for sipping, served by the bottle or glass.

Devised to suggest the Mediterranean at dusk, Seirēn was designed by S&S Studio with 40 seats and a color palette reminiscent of the sea and shore. An impressive 10-seat marble bar is centered with tufted leather banquettes, while a mirrored wooden arc behind the bar was inspired by a maritime compass. Looking ahead to spring, Seirēn will be joined by Song. This hidden bar will be located beneath the cocktail lounge, only accessible through a discreet entrance.

Sail Away

Please enjoy the Wave Issue, our cruising special for the first half of 2026. Cruising is booming, and travelers cannot get enough of it. I just returned from a fantastic trip on Regent Seven Seas Mariner with a group of Globility Board members and other Global Traveler subscribers. We departed from İstanbul and made our way through the Dardanelles Strait, connecting the Sea of Marmara to the Aegean. From there we entered the Mediterranean. The ship made interesting stops in Greece, Montenegro and Croatia before docking in Trieste. Please read my GT Tested review of Seven Seas Mariner in this issue.
