Michelin-starred Chef Charlie Palmer recently celebrated the highly anticipated opening of his Cattlemen’s Bar, the first of three forthcoming Charlie Palmer Collective dining concepts coming to Paso Robles Inn. Cattlemen’s Bar celebrates Paso Robles’ storied ranching heritage. Originally founded in 1942 and once the go-to gathering place for neighboring ranchers, Chef Palmer returns the 83-seat bar and lounge to its roots while serving a seasonally driven menu of comfort classics and ranch staples.

“Ranchers have long been the heartbeat of California cuisine, and Cattlemen’s Bar is a living tribute to that legacy. We designed this space to be an extension of their world, stripped of artifice and steeped in the traditions of the trade,” said Chef Charlie Palmer, founder and CEO, Charlie Palmer Collective. “This is a place where you can dust off your favorite pair of boots and feel right at home. We’ve captured the spirit of the ranch while mirroring the grace of a modern California bar.”

The venue is a reinvention of the classic Western watering hole, with swaths of wood and leather, hand-picked antiques, paintings, and equestrian relics. Other design details include leather bar stools featuring intricate embossing inspired by traditional Vaquero saddle patterns, horse bridle buckle details on custom light fixtures, a custom-designed case in antique brass, walls saturated in indigo blue, warm woods, stone tiles and deep-seated furniture.

Paso Robles’ ranching history is incorporated into every aspect of the guest experience, including a recurring residency spotlighting influential women in the ranching community; partnerships with local farms; and an exclusive collaboration with handcrafted Western footwear and accessories brand Tecovas to outfit staff uniforms and launch Cattlemen’s Tecovas Boot Bar. At the bar, guests can borrow premium Tecovas boots to dine in style.

The menu at Cattlemen’s Bar comprises time-honored ranch fare, reimagined with an elevated, Western spirit. Shareable bar bites include La Panza Pie, a slow-braised, beef cheek-filled pastry with pickled beet chutney; Cattlemen’s Chili simmered in ancho chile and smoked tomato; and  crisp, cornflake-crusted Handle Bar drumsticks. The culinary offering also delivers plates like the Hot Honey Chicken Biscuit, The Stockman Burger, French Onion Filet Mignon and Chocolate Peanut Butter Pie. A signature cocktail menu follows the same theme.

Cattlemen’s Bar’s robust lineup of programming transforms the bar into a social epicenter; in addition to the residency spotlighting Women of the West, the second Tuesday of each month celebrates Paso locals and the community with live music and a $29 prime rib special and the weekly Burger Night, on Mondays, offers the Stockman Burger and a beer for $24.

Following Cattlemen’s Bar, Paso Robles Inn will unveil two additional destinations: Salina Rooftop (May 2026) and The Pass by Charlie Palmer (Summer 2026).
