Fairmont Spa Century Plaza

Los Angeles-based Century Plaza Hotel recently underwent an extensive restoration project, complete with reimagined 400 guestrooms and suites, 63 luxury residences and a 14,000-square-foot Fairmont Spa Century Plaza. The new spa features an array of services from massages to skincare treatments to body treatments. The new spa also includes a rainfall-style shower, Himalayan salt room and an aromatherapy steam room.

“We are attached to this amazing hotel that has all of this history. So much has been brought to life,” said Magdaleena Nikolov, general manager of Spa, Wellness and Retail. “A lot of what we do in spa is bring the old to the new and tap into the history and global aspect in the latest and greatest way possible.”

The spa uses only organic products like bitter orange toner, prickly pear oil and steel wands for optimal skincare. Additionally, the routines and treatments found at the spa all revolve around the sun so guests find an inner balance and peace with nature and themselves.

Fairmont Sonoma Mission Inn & Spa

This wine country-style hotel emphasizes good food and drink as well as supporting local food and produce. Executive Chef Jared Reeves of the hotel’s elegant 38° North Wine Bar uses only the finest ingredients for each dish. Reeves and hotel sommelier Brian Casey work together to ensure each pairing of food and drink leave guests satisfied.

One of Reeves’ favorite ingredients is caviar. Fairmont Sonoma uses only the finest caviar from U.S.-based Tsar Nicoulai, a sustainable caviar farm. Reeves and Casey often try to match dishes featuring caviar with sparkling wine, a perfect combination as the New Year approaches.

With the New Year comes new goals, and the spa at the hotel offers lighter, healthier bites for guests looking for a rejuvenating day. Reeves also ensures the spa includes tasty dishes for spa-goers.

Reeves works with the hotel to ensure many of the ingredients used in his dishes come from local food vendors and organizations. Supporting local food and produce sellers in order to create culinary masterpieces aligns with the resort’s overlining philosophy balance. The culinary department seeks to take this concept to the next level as it prepares to launch its upcoming Pick Your Own menu with more details on the addition coming soon.

Sofitel Los Angeles at Beverly Hills

After witnessing an exciting Battle of the Bottles event between Director of Food and Beverage of Sofitel Los Angeles Mathieu Bruno and Director of Nightlife at Riviera 31 Aidan Demarest, their concoctions prove to be anything but plain and boring. The event served as an homage to the exciting nightlife of the city and hotel, with Bruno and Demarest creating their own favorite cocktails and mocktails.

Riviera 31 includes an extensive cocktail, wine and beer menu for guests to relax and enjoy the atmosphere of the swanky lounge.

The espresso martini is a trendy cocktail found at the Sofitel Los Angeles and is a popular drink among guests. A favorite of Bruno’s, the hotel uses only the freshest coffee beans for this cocktail. The hotel also takes note of the growing interest in alcohol-free cocktails, or mocktails, and includes two delicious mocktails on the menu. Demarest’s love of negronis saw him include an alcohol-free version of the cocktail called “no-groni” to signify the lack of alcohol in the drink. The mocktails utilize distilled drinks that mimic alcohol to create the same well-loved concoctions.
