Each year, starting with World Cocktail Month in May and stretching into summer, a select group of Accor Hotels MGallery Collection properties celebrate the art of mixology across many of its properties worldwide, turning bars into a stage for creativity and connection.
This year, 16 MGallery Collection hotels invite guests to experience the bar as a destination in its own right. In collaboration with Michelin-starred chef Pichaya “Pam” Soontornyanakij, the boutique hotel collection unveils an immersive pairing concept that transforms an evening drink into a curated gastronomic ritual through the art of pairing cocktails and exquisite bites.
The MGallery Collection’s Art of Mixology is expressed through both sip and bite, creating a refined conversation between cocktail and cuisine. Each pairing is designed not simply to accompany, but to elevate, allowing flavor, texture and aroma to move in harmony.
MGallery Collection extends beyond the glass for the first time, venturing into a bold culinary dialogue where mixology meets Michelin-starred gastronomy. Chef Pam, founder of Bangkok’s Michelin-starred Potong, stands among the most influential voices in contemporary gastronomy.
Named The World’s Best Female Chef 2025 and Asia’s Best Female Chef 2024, Chef Pam is celebrated for a culinary philosophy rooted in contrast, balance and storytelling, where flavor becomes memory and texture becomes emotion.
Beyond her culinary achievements, Chef Pam is a passionate advocate for women in hospitality, mentoring emerging talent through her Women for Women initiative, a shared commitment bringing depth and authenticity to this collaboration.
This year, the 16 selected MGallery Collection properties spanning Europe, Asia, Australia, the Americas and Middle East will offer their own distinctive setting, united by a shared celebration of flavor, creativity and elevated mixology.

“For me, flavor is a language shaped by contrast, memory and emotion,” said Chef Pam. “My cuisine is guided by the idea of five flavors and five emotions, striking a perfect balance of taste that evokes feeling and connection. With MGallery Collection, we wanted to let that language unfold beyond the plate and into the bar. These bites are not simply accompaniments.”
Created for the rhythm of the bar, effortless to share and instinctively paired with a sip, bites are bold yet balanced, familiar yet unexpected. Each unfolds in layers, playing with temperature, texture and contrast rather than a single note. Signature creations including caviar-crowned tartare, sun-kissed crab, and squid’s midnight dip reflect Chef Pam’s hallmark balance of strength and finesse.
Across the selected 16 properties, a curated cocktail collection is served alongside Chef Pam’s globally inspired bites, creating a fully immersive gastronomic encounter. From the refined elegance of The Botanist’s Waltz paired with Tender Temptation wings to the bold clarity of the Prohibition Martini alongside caviar-crowned tartare, each pairing is crafted to enhance contrast, texture and flavor.
Combinations include the Midnight Fizz Society meeting the succulent crab roll, the Cult of Verde served with the polenta truffle, and the gorgeous Archive of Tomorrow aligned perfectly with crispy squid. The classics of the Sunset Botanica and Tropic Mirage are paired with local bites, inviting guests to journey into the local flavors of the regions.
